This an apprenticeship framework for those who have full time employment within the industry working back of house.
What will I learn?
There are two routes; professional cookery ot patisserie and confectionary. You will choose which route you wish to take depending on your career aspirations.
- Fish Mongering
- Hot and cold sauces
- Hot and cold desserts
How will I be assessed?
You will assessed by continuous portfolio assessments and online technical certificates.
Completion of Level 2 Functional Skills English and Level 2 Functional Skills maths or the equivalent.
Progression & Career Opportunities
Upon completion of this course students can progress on to Level 4 Higher Apprenticeship framework. Chef de partie or higher education.
You will be required to purchase a kit and books.
